For this reason, we corral our vines and, instead of throwing away the tops we harvest, we make them into a delicious pickle in salt and vinegar to accompany your ouzo or tsipouro or even decorate your salads.
Production
The tops are harvested in spring, when they are still tender, alongside our vine leaves from our organic vineyards. On the same day they are packed in a mixture of salt and vinegar (salamoura) in small jars of 50 and 100 grams.
